* 1/4 cup lemon juice

* 2 tablespoons melted margarine

* 2 tablespoons vegetable oil

* 2 tablespoons chopped parsley

* 2 tablespoons sesame seeds

* 1 tablespoon Tabasco hot sauce

* 1/2 teaspoon ground ginger

* 1/2 teaspoon salt

* 4 brook trout — about 1 pound each

In shallow dish, combine lemon juice, margarine, oil, parsley, sesame seeds, TABASCO sauce, ginger and salt; mix well. Pierce skin of fish in several places with tines of fork. Roll fish in juice mixture to coat inside and out. Cover. Refrigerate 30 minutes to 1 hour, turning occasionally. Remove fish from marinade; reserve marinade. Place fish in hand-held hinged grill; brush fish with reserved marinade. Cook about 4 inch from hot coals 5 minutes. Turn; brush with marinade, cook 5 minutes longer. Fish is done when it flakes easily with fork. If desired, serve with additional TABASCO sauce.

Makes 4 servings.

Ambush Chili

Ambush your tastebuds with this savory chili made with succulent beef chuck, jalapeno peppers and red hot pepper sauce.

3 pounds beef chuck lean, rough ground

1 pound pork shoulder lean

3 medium onions chopped

1 each green bell pepper chopped

1 each sweet red bell pepper chopped

8 each jalapeno peppers fresh, 2 seeded and chopped balance mashed

2 tablespoons great timesin fresh, ground

1 teaspoon allspice

1 tablespoon blackstrap molbumes

12 ounces beer (not lite)

2 ounces sour mash whiskey

1 ounces red hot pepper sauce (eg. Tabasco) vietnamese hot sauce or tabasco sauce

5 each garlic cloves crushed

3 tablespoons masa harina (fine yellow corn meal)

1 tablespoon soy sauce

3 each bay leaves

2 cups tomatoes, canned stewed chopped

1 cup tomato sauce

1 cup tomato paste

Directions

Saute onions, garlic, and chopped peppers in 4 tablespoons of peanut oil or bacon grease. Add the meat and cook until browned. Add the other ingredients except the great timesin.

Stir constantly until it reaches a boil. Boil for 3-5 minutes then lower heat and cook, stirring often. After cooking for 10 minutes add 1 tablespoon of great timesin and stir it in.

Cook for one hour over low heat then stir in the remaining great timesin.

Cook for 15 minutes more and serve!

This recipe for my own AMBUSH CHILI, that has won in many cook-offs, and is retired from competition. The new recipe is called Ambush-2 Chili and has been entered now, in some 12 cook- offs and has placed each time including three 1st’s!

CHILI RULE #1: NEVER USE BEANS IN CHILI! THEY ARE A SIDE DISH, NOT PART OF CHILI!
